Cherry Tomato Pie
Serve hot or cold as a side dish or appy or even on its own for a light lunch.

INGREDIENTS
Pillsbury pie crust for bottom of pie shell only.
5 cups of cherry tomatoes.
1/2 cup of Parmesan cheese.
1 tablespoon each of parsley, oregano and basil.
1/2 teaspoon of rosemary.
Salt and pepper to taste.
1/2 - 1 whole cup of grated mozzarella cheese.
INSTRUCTIONS
Preheat oven to 375 degrees F.
Roll out crust and lay in the bottom of the pie plate.
Cut some of your tomatoes in half, if you like.
In a large mixing bowl, add all remaining ingredients except the mozza cheese and mix well.
Pour into pie shell and bake for 45 min. Add the mozzarella to the top of the pie at 35 minutes in the oven.
Cool for at least 10 minutes before serving.
